Kale Burgers
Kale has been called “the new beef”, “the queen of greens” and “a nutritional powerhouse”, and is praised to the skies in food blogs everywhere – and rightly so. Kale is low on calories, low on fats and full of fibers, iron, calcium, antioxidants, omega 3, and vitamins A, B, and C.
Ingredients
× 1-
18 oz
kale
-
3 tbsp
white flour
-
½ cup
breadcrumbs
-
2 tbsp
nutritional yeast
-
2-3 tbsp
oil
-
1 tsp
vinegar
-
2 tbsp
tamari
-
2 tsp
thyme
-
2 tsp
pepper
-
1½ tsp
salt
-
Begin by steaming the kale for , or until it is completely soft. A simple way of steaming is to place a stainless steel colander in a large pan, with boiling water underneath. Steaming the kale will make sure it preserves all its nutrients. You’ll need quite a large pan, and a colander that fits at least 500g of kale (it shrinks after it has been steamed for a bit.) If you’re not able to steam the kale, boiling works as well, but try to use as little water as possible.
-
Chop the kale well, or put it in a blender, a little at a time.
-
Mix all the ingredients into a paste, then shape into small burgers.
-
Sauté for about on each side.
-
Serve with, for example, pressed potatoes or a potato gratin.
