Cabbage Casserole

SourceBloody Good Visit Web

This is similar to the Cabbage Dolma - the combination of minced meat and fried cabbage is brilliant. In this recipe it’s taken to its extreme, it is basically a large pan of cabbage and minced meat. Chopped, mixed, and oven-baked. The combination of caramelized cabbage and juicy mince is just as delicious in this vegan version as it was in the meat version.
The trick to getting a really tasty cabbage casserole is to use some type of shapable mince and to finely chop the cabbage, so the mince gets enough contact surface to bind. You can also use regular vegan mince if you like, but shapable helps to get the right consistency.

  1. Turn the oven to 200 °C.

  2. Mix rice, oat cream, 50 ml/⅕ cup water and 1 tbsp stock concentrate in a saucepan and let come to a boil. Add another 200 ml/⅘ cup water and let simmer on low heat for . Stir every now and then until the water has evaporated and the rice is done.

  3. Shred or chop the cabbage finely and fry in oil on high heat in a large frying pan until it colors. Add ~250 ml/~1 cup water, syrup, and soy sauce and let cook under a lid until about half the water has reduced and the cabbage is soft. Let the rice and cabbage cool down at room temperature. If they are too hot when mixed with the mince, it can turn stiff and crumbly.

  4. Mix the vegan mince with the rice in a bowl. Add the rest of the stock concentrate, potato flour, ground allspice and ⅔ of the fried cabbage. Add salt and pepper to taste and make sure you have a smooth batter that sticks when formed into a ball.

  5. Pour the batter into a greased oven pan with high sides, about 20 × 30 cm, and top with the rest of the cabbage. Bake in the middle of the oven for about . Serve with lingonberries, a nice cream sauce, pressed cucumber, and your choice of potatoes.
